“Ribelle” is a Charmat method sparkling white wine from a single vineyard of Pignoletto. The grapes are harvested early to preserve their high acidity, and the must is fermented at low temperatures. Traditionally produced as a still wine, in recent years it has been reinterpreted as a sparkling wine, giving it a more “rebellious” soul.
